The baker
Sabariah started with two trays
and a neighbour's birthday.
She baked kaya swiss rolls and butter cookies out of a flat off Jalan Ipoh, selling to the same twelve neighbours every Friday. The list grew until the kitchen couldn't hold it. In 2019 she took the shoplot at 2-G-3A — aluminium trays, wax paper, handwritten labels, the smell hits you before you're past the five-foot way.
She still writes the board by hand each morning. When something's gone, it's gone.

01 — Chiffon
Gula melaka soaking into the chiffon, 6:40am.
Palm sugar from Melaka, reduced with pandan leaf, brushed on while the tube tin is still too hot to hold.
02 — Swiss roll
Kaya spread thin, rolled while the sponge still gives.
Coconut milk and duck egg kaya, stirred forty minutes over low heat. Rolled in wax paper, cut only when ordered.
03 — The bench
Flour, 5:50am, before the shutter goes up.
Aluminium trays, handwritten labels, one deck oven. Everything on the board comes out of this bench.
